Slow Cooker Turkey Meatballs
Everybody loves a spaghetti and meatball meal, but perhaps without so many calories. There is a way to make this meal healthier and just as satisfying, by substituting a few key ingredients for a healthier option. Ingredients 1 pound of ground turkey 1 cup panko breadcrumbs 2 tablespoons salt 1 teaspoon pepper 1 egg 1 tablespoon dry parsley 2 cans tomato puree 1 tablespoon grated parmesan cheese 2 tablespoons garlic powder 2 tablespoons olive oil In a bowl combine the ground turkey, breadcrumbs, 1 tablespoon of salt, 1 teaspoon black pepper, 1 egg *cracked, 1 tablespoon dried parsley, and 1 tablespoon of grated parmesan cheese. Mix together by hand until all ingredients are thoroughly mixed. Form into medium size balls (about the size of a golf ball) and set aside on a plate. In a slow cooker pot add 2 cans of tomato puree, 1 tablespoon salt, 2 tablespoons garlic powder, and 2 tablespoons of olive oil. Once all ingredients are mixed in the slow cooker pot, place the turkey meatballs in the tomato puree mixture and set the slow cooker on low for 6 hours. Once cooked these meatballs will be tender and flavorful! Add with a side of veggies, on a bed of zucchini spirals, or on a whole grain pasta. Enjoy!
